Need an Easy Christmas Cookie Recipe?

Ah, Christmas. The scent of freshd baked goods wafting through the house, the trays of sweets just sitting there for any hungry child (or adult) to enjoy. You’ve got to love it! And you’ve got to make some cookies. If you need an easy Christmas cookie recipe, the recipes below can help you out.

1 square semi-sweet chocolate
1 stick butter or margarine
2 cups sugar
½ cup milk

1 teaspoon vanilla
3 cups quick-cook oats
Combine chocolate, milk, butter and sugar in saucepan. Heat over medium until chocolate and sugar are melted. Increase heat and bring liquid to rolling boil. Boil exactly 75 seconds. Add vanilla and oats. Remove from heat and stir to coat oats. Drop by spoonful onto waxed paper and dry. Nuts or marshmallows may be added to this wonderful holiday treat.

1½ cups butter, softened
1½ cups sugar
3 tablespoons milk
2 teaspoons vanilla
4½ cups flour
¾ teaspoon salt
2 cups pecans, finely chopped
Blend butter and sugar. Beat until fluffy. Combine milk and vanilla. Blend with butter/sugar mixture. Add salt, flour and pecan; mix well. Divide dough into 3 balls. Wrap in plastic wrap and place in refrigerator overnight. Cut into slices 3/8“ thick and place on ungreased cookie sheet. Bake at 350◦ F for approximately 12-15 minutes or until slightly brown around the edges.
Makes approximately 7 dozen

All right! All done. Now the only problem is going to be which one to leave out for Santa and which ones to eat yourself! No matter which you choose, write out the baking instructions for Old Saint Nick. He might need a quick and easy Christmas cookie recipe, too!
